
I have been MIA from my usual blogging bit- and while inexcusable I promise you I have some fantastical things coming up for my vigilant readers!!
For now I have a recipe or two to share 🙂 I have really been feeling tortillas a lot lately (homegirl loves her Mexican food). Trader Joes has some top notch Chia seed tortillas and I found some Mission Brand “carb control” tortillas last week at Target (10 g of fiber in each tortilla- won’t be eating too many of these the night before a race).
The tortillas come in because I am admittedly bad about getting in my veggies. But I recognize this as a potential downfall of mine, and work to correct it. I essentially try to follow the diabetic plate method (that yes- I do, in fact spend approximately 80% of my day discussing) – I have a protein, a non-starchy vegetable, and a carbohydrate of some sort.
The protein and the carbs those are no issue for me. But the veggies are where I need to get creative, so things like tortillas/tacos, salads, and some pastas are a great medium for me balance in some more veggies. Lately I have been a tortilla kick, as I said, I’ve been having tortillas a few times a week, and I have been sneaking in a lot of veggies on them. On Mondays (to stay meatless) I have been doing egg whites and soy chorizo from TJ’s.

Well tonight I really didn’t know what I was in the mood for. After some careful head scratching, freezer scouring, and inventory of what was probably going to go back in the next week. I came up with some lean beef hiding in the back of my freezer, and some plain greek yogurt. From there I remember I had some shredded cheese, and cilantro, and some mushrooms, and some frozen roasted peppers.
So here it is:
-Extra lean beef (or any protein)
-1 bag frozen roasted peppers
-2-3 Tbsp plain greek yogurt with a squeeze or two of concentrated cilantro
-1 container of mushrooms
-3 Carb control tortillas
-Reduced fat cheese




So the finished product was 3 tacos with roasted bell peppers, and mushrooms, 3 tortillas (30 g of fiber), reduced fat cheese, and cilantro “cream” (greek yogurt and cilantro).
I decided I was a little hungry afterwards, and wanted something sweet. I have been pretty lucky lately with my food combos- so I continued to test my luck. I wiped out my passion fruit noosa and drizzled some hot fudge- (which I normally do not buy for myself because to me that’s dangerous. It is currently hiding in the back of my refrigerator where I will not be able to make direct eye contact with it every time I open the door)- and sprinkled some blueberry and flax KIND granola on top.
I have to say for someone who walked through the door with no idea what she wanted to eat tonight- I think this gal did ok for herself 🙂
