Low Carb Orange Noodles With Veggies

Now that my running mileage has somewhat decreased, I have also ((somewhat)) decreased my carbohydrate intake (this has been a difficult task).  I also like trying new things, so I can be more confident in what I recommend to my patients.

I happened upon these Shirataki Angel Hair noodles at my local Marianos Market.  I also picked up a “stir fry” blend of veggies at Marianos as well, and I have a bag of frozen seafood medley from Trader Joe’s that’s been in my freezer.

I love buying frozen food, because it gives me a lot of flexibility in my cooking.  Just remember a few rules when buying frozen foods- try to avoid sauces and any kind of added sodium or sugar.

The blend of frozen veggies I had from Marianos was a blend of broccoli, mushrooms, bell peppers, carrots, and water chestnuts, with no added sauce.  I put 1/2 of that bag in a saute pan with 1/2 the bag of the seafood medley from TJ’s with a little EVOO that I had already heated.

I let those get to the point of being halfway cooked, and added the bag of noodles (I rinsed the noodles beforehand).

Once the noodles were in with everything else I grabbed an orange, washed, and grated the peel into the saute pan.

To make the “sauce” I used Rice Vinegar, Liquid Aminos (a much lower in sodium soy sauce substitute), Sriracha, and orange juice.

I squeezed the entire orange, and did a few solid squeezes of sriracha (I like sweet and spicy), then about 2 Tbsp rice vinegar, and 1 Tbsp Liquid Aminos.  From there you can adjust to your desired taste.


There are a few great things about this recipe to be honest:

1) It was easy, the time from conception to it to get into my bowl was about 20 minutes

2) This is low(er) in sodium, as well as carbohydrate

3) It was a fast and easy meal that was also really nutritious- there were veggies, meats- this meal was genuinely packed with protein, fiber, and a wide array of vitamins and minerals.
