Recipe Rewind: Tropical Larabars

So within the past year I published my DIY Larabars on HDHH.

However I’m all about improving and the last time I made them following the recipe I posted they were dry, and I was just disappointed.

With my new job I am now doing a food prep day- and prepping meals, sides and snacks.

And one of my favorite snacks- especially pre-workout is a larabar. And I had all the ingredients to make my own- but my main concern was- how do I make them better. And I did!!


I made Tropical Larabars
Here is what I did:

-1 cup pure almond meal (only ingredient should be “almonds”)

-Juice of 2 small lemons

-1/2 cup raw unsweetened coconut

-1 tbsp coconut oil

-1/2 cup soft and juicy dried mango

-14 pitted medjool dates

Basically all of the ingredients came from Trader Joes and remember if you can’t find “almond meal” you can just buy roasted (unsalted) almonds, and throw them in a food processor, and voila you will have almond meal.

So first put the almond meal and dates in a food processor, and let the two start to blend. Then add the lemon juice, and coconut oil and the shredded coconut. Let that blend some, and then add the mango.

Take the “dough” out and put it on a sheet of plastic wrap, cover it, and try to roll it with a rolling pin to get it flat and even.

Put in the refrigerator for anywhere from 15 minutes to an hour to solidify, then cut into uniform pieces.

Below are the macros- based on a yield of 10 bars, although I probably could have gotten 12, maybe 13 or 14 bars out of this- which would make the values below lower.

Let me tell you! They turned out better than they ever have before. They are moist, and this is the closest I have come to recreating something so similar to the actual Larabar.

Again- all you need is a really good base recipe: the almond meal, dates, lemon juice, and coconut oil- then you can add whatever your heart desires- dried blueberries, cocoa and coconut.

My next creation is going to be white peach and ginger.

These bars are gluten free, and vegan- although you wouldn’t be able to tell!
