Greek Meatballs & Sauce

With the holidays coming up there is always a need for delicious recipes for office parties, family gatherings, or even a simple weeknight meal. These are easy to make ahead of time, and reheat, make the day of, or be a routine part of meal prep.

Let me preface all of this with I love veal, and lamb, I know they aren’t everyone’s favorite choices, lamb is especially not Pat’s favorite (I happen to love lamb), so one thing that works really really is doing half and half, so I will do half lamb, and half ground chicken, turkey, or pork.

The other nice thing about these is you can incorporate seasonal ingredients to make them more festive – for instance subbing out the feta for goat cheese, and olives for cranberries is a great way to use seasonal ingredients as well. You can also do part sausage here too (pork or chicken) for example half ground lamb and half chicken or pork sausage. Using all sausage is an option as well, however, the fat and sodium contents will increase A LOT.

P.S. If you make the cranberry goat cheese metal balls, season with fresh sage – you won’t regret it.

You can absolutely use any ground meat you want to for this recipe if you’re opposed to using veal.

  • 1-1 1/2 lb veal/lamb/ground meat of choice
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup feta
  • 1/4 cup kalamata olives
  • 1 tsp (each) coriander, marjoram, & dill
  • salt & pepper to taste
  • 1 tsp allspitce
  • 1 tsp smoked paprika

  • 2 cups Greek yougurt (2% and Full fat taste better)
  • 1 cucumber, seeded, and grate (or finely diced)
  • 1-2 Tbsp fresh dill, chopped
  • 2 tsp garlic
  • juice from 1 lemon
  • salt & pepper to taste
  • 1 Tbsp olive oil

Let’s talk about how to make the perfect uniform meatballs for a second. I have two tricks I use – one is a measured scoop that I got at GFS a few years ago, this allows me to have uniform portions/sizes. If you don’t want to purchase another “gadget” using a tablespoon and knife is also quite effective.
